Choc Chip cake like cookies

Socially we're now back to what's known as Cook night.  A few years ago, when I moved home after being made redundant my friends now ex-wife worked shifts so when she was on nights I'd go over and we'd play Mario Kart and watch crap TV (the first time I ever met her she came home to find us sitting on the sofa racing, barely taking our eyes from the TV to say hello!).  As she was working we took it in turns to cook.  This developed into another friend joining us, who couldn't cook beans on toast according to his fit sister (now he can cook cheese on toast as well).  After an argument, thanks to Kev's calendar it was found to be my turn to cook and made fusion meatball fajita's.  If you're lucky I might share the recipe for that another time!



Tonight's is another quick recipe, takes about 10 minutes to make the batter, and about 15 mins to cook each batch.  Rather than chewy cookies these are half cookie, half cake.

Ingredients for a single batch (it doesn't make enough to feed 4 hungry bastards):
4oz Butter or Marge
2 oz Sugar
1 Egg
5oz Self Raising flour
100g choc chips

So here's how to do it:

  1. Cream the butter and sugar in a bowl (That means use an electric whisk and mix them on high for a while).
  2. Add the egg and continue to mix the batter.
  3. Fold the flour into the batter mix.  I might of just mixed it in by hand as I'm lazy.
  4. Add the choc chips.
 I got this far and realised I better double the quantities as they'd disappear by lunch time otherwise!  That's it for another week, let me know if you have anything you think I should make next week.....
